Job Description
The PhD project involves:
- Screening yeast and moulds of Generally Recognized as Safe (GRAS) status regarding growth characteristics, protein yield, and chemical composition.
- Optimizing growth media and semi-solid fermentation processes to enhance biomass yield and develop desirable textural properties and flavors.
- Conducting reformulation studies to create meat-like fibrous products.
- Evaluating the cooking quality of the developed meat analogues.
Students will be trained in various disciplines, including microbial fermentation, chemical analysis, protein functionality, food reformulation, and quality assessment. Participants will have access to state-of-the-art facilities, including a GMP food pilot plant, Sensory Science Centre, Flavour Centre, and Chemical Analysis Facility.
