Job Description
The PhD candidate will investigate the following areas:
- The impact of chemical, physical, and enzymatic processing on the extraction, isolation, and characterization of plant proteins.
- The effect of pre-treatments and environmental conditions (pH, ionic strength, and temperature) on bulk self-assembly of native oat proteins.
- The relationship between protein physicochemical and colloidal properties and their functional applications, particularly focusing on foaming properties.
Expected Results
- Insights into the impact of processing steps on the physicochemical properties of proteins.
- Mechanistic insights into the foaming properties of plant proteins.
- Understanding of the relationship between protein self-assembly and interfacial properties.
