PhD Position in Food Science & Technology, Malaga, Spain

Postdoc in Spain

PhD Position in Food Science: The metal food packaging industry has long relied on coatings, particularly epoxy resins based on bisphenol A (BPA), to maintain the nutritional and organoleptic properties of preserved foods by preventing corrosion. However, BPA poses significant health and environmental risks. This PhD project aims to develop sustainable and safe alternatives using tomato pomace, a by-product of the fruit processing industry, to create biologically sourced coatings for cans. These new coatings will be enhanced with microcrystalline cellulose and gallate esters for improved mechanical strength, antibacterial properties, and antioxidant capabilities. The project will compare these innovative coatings with traditional BPA resins, focusing on their properties, environmental impact, and production costs.
