Job Description
- Conduct applied research on the metabolism and physiology of non-Saccharomyces yeasts in beer and wine, focusing on respiratory metabolism and non-alcoholic fermentations.
- Investigate the biochemistry of respiratory metabolism and its impact on the organoleptic quality of the final products.
- Develop, optimize, and scale biotechnological fermentation processes, moving from laboratory settings to pilot and industrial scales (up to 1000L).
- Collaborate with industrial partners in the brewing, wine, and biotechnology sectors to facilitate technology transfer.
Eligibility / Qualification
- Education: PhD in (Food)-Biotechnology, Bioprocess Engineering, or a related field with a focus on the production of non-alcoholic wine/beer and non-Saccharomyces yeast.
- Technical Skills: Proven experience in aerobic and anaerobic fermentation, bioprocess development, process scale-up, and fermentation engineering. Ability to operate bioreactors at various scales (1L to 1000L).
- Mindset: Entrepreneurial spirit with the ability to translate scientific findings into practical industrial applications.
- Language: Fluent in English; B2 proficiency in either French or German.
