Postdoctoral Associate – Dr. Sarker Lab: Dr. Sarker’s lab at West Virginia State University is seeking a highly motivated Postdoctoral Associate for a USDA NIFA-funded pilot project focusing on functional food product development. The project involves designing and conducting experiments to develop dairy-free yogurt analogs supplemented with functional ingredients such as baby ginger. The research includes testing physicochemical, textural, microbial, and sensory properties, along with assessing probiotic viability and its impact on gut health.

Eligibility/Qualification:

  • Required Education: PhD in Food Science, Food Microbiology, or a related field from an accredited institution.
  • Preferred Experience: Background in Probiotics and/or Functional Food Product development.
  • Additional Eligibility: Must be eligible to work in the U.S.

Job Description:

The Postdoctoral Associate will:

  1. Design and execute research experiments on dairy-free yogurt analogs supplemented with functional ingredients.
  2. Perform standardized qualitative and quantitative tests to assess physicochemical, textural, microbial, and sensory properties of yogurt analogs.
  3. Study the impact of probiotics on yogurt quality and gut health.
  4. Conduct literature reviews, analyze data, and contribute to writing reports, grant proposals, and manuscripts.
  5. Collaborate with faculty and students, both on and off campus, to support various research projects.
  6. Assist the Principal Investigator (PI) in managing research activities and conducting independent investigations.
